북스쿡스에 대한 전반적 소개를 부탁한다.

북스쿡스는 북촌 한옥마을 이라는 위치적 특성을 반영하고, 지역의 문화적 코드와 연결된 디자인을 담은 푸드 갤러리 공간이다. 우선 한옥마을이란 공간적 특성으로 이 공간을 설계하는 과정은 쉽지 않았다. 모순이긴 한데 북촌의 한옥은 대개 50~60년 내외에 조성된 것이라 실제 고택들은 몇 개 존재하지 않는다. 때문에 개량한옥으로 전통을 논하기가 아이러니한데, 그 자체로 고유의 힘이 있다고 느꼈다. 또, 한옥은 그것이 가진 디테일이나 성격이 너무 강하기 때문에 우리는 이 공간에 전통의 ‘먹’ 이라는 재료를 이용해 리크리에이티브(ReCreative)한 시도를 해보았다. 위치적으로는 도로에서부터 입구가 오아시스 마냥 안으로 들여진 배치를 하고 있다. 때문에 먹의 농담을 이용해 온전히 이 공간의 느낌을 표현해도 흥미로울거란 느낌이 들었다.

Please explain Books Cooks in general.

Books cooks is a food gallery with design connected to the regional cultural code and reflecting the positional feature of Bukchon Hanok Village. Above all, the process to plan this space with special feature of village of Korean traditional houses was not easy. Contradictorily, the real traditional houses are only a few and most houses at Bukchon are built 50~60 years ago. Then, it is ironical to comment on the tradition with improved traditional houses, but we felt it kept its own power. And because Korean traditional houses have so strong details and character, we attempted to ReCreate this space using a traditional material of ink stick named ‘Meok’. Its positional entrance is located back from the street like an oasis. In result, we thought it would be interesting to express the atmosphere of this space completely using the light and shade of Meok.

개조하면서 중점적으로 보여주려 한 것이 먹의 농담을 이용해서 전체를 하나로 아울러 묶어주는 것이라고 봐도 되겠나?

맞다. 우리는 이번 공간에서 일부러 모든 컬러를 배제했다. 우리가 마감한 것에서 유일한 컬러는 입구를 들어서자마자 마주하는 그림이다. 컬러를 배제한 이유는 앞서 언급한 처마의 디테일이나 한옥이 갖고 있는 성격이 너무 강하기 때문이다. 이것들이 서로 상충되어 충돌할 수 있기 때문이다. 수묵화가 농담만 있듯, 이 공간에서도 컬러를 배제했다. 한옥이 가지고 있는 고유의 요소가 너무 많기 때문에 색을 빼고 먹이라든지 한지 등 재료 자체의 물성을 통해 이러한 충돌을 희석시키려 했다.

내부 홀의 3/2정도는 한지로 마감을 했다. 부수적인 목틀은 불가피하게 생긴 것이지만, 이 집을 처음 보았을때 서까래가 주는 인상이 강했기 때문에 이 일부를 가려 살포시 드러나는 것도 매력적이라 생각했다.

또, 색을 배제한다는 이야기를 보충하자면 이 공간은 오픈 후에 색이 넘쳐날 것이다. 손님, 옷, 계절, 음식 등의 색 때문에 고정된 마감에서는 최대한 컬러를 배제했다. 책이 꽂아지고, 음식이 차려지고, 손님이

찾아들면, 컬러는 채워지고 계속 변화할 것이다. 그런 의도에서 이 공간의 색을 정리 할 수 있다.

Do you agree with my thought that what you intend to show through renovation is to integrate the whole space using the light and shade of Meok?

Yes, we eliminate all the colors at this space intentionally. The only color is a picture which we can face as soon as entering the entrance. The reason why we eliminate the colors is just because the detail of eaves and the features of Korean traditional houses is so strong, as mentioned above. We made an effort to prevent the conflict of these elements. As ink-and-washing painting is expressed only with the light and shade of Meok, this space is expressed without colors. By using the materiality itself of materials such as hanji(Korean paper made from mulberry tree) and Meok, we intended to dilute the conflict of many elements unique to Korean traditional houses. Two third of interior hall is finished with hanji. Additional wooden frames are produced inevitably, but the rafters look attractive when they are concealed vaguely because they have so strong impression. Another reason to eliminate the colors is because this space will be filled with colors when it is opened. When books are put on, foods are served, and customers visit, this space will be filled up and continue to change. These elements become the colors of this space.

중앙의 마당을 중심으로 한 이 집의 세부구조에 대해 이야기해 보자.

한옥을 이야기할 때 늘 언급되는 내용이 안과 밖, 마당과 방 등이 경계가 없다는 점일 것이다. 이곳에서는 마당이 그 경계 없는 역할을 하고 있다. 이 집의 중앙에 위치한 마당은 흡사 주변을 둘러 싸고 있는 실에서 보았을 때 신명나게 두들기는 난타공연장처럼 보인다. 때문에 우리는 이 마당에 오픈 키친을 설치하고, 주방에서 일어나는 다이내믹한 행위들이 한옥 고유의 특질과 만나 다양한 기능이 믹스되어 어우러지길 바랐다.

물론 이 공간의 용도를 푸드갤러리 라고 정하긴 했으나 다양한 행태들. 예를 들어, 푸드 갤러리, 출판 기념회. 레스토랑, 쿠킹클래스 등 다양한 행위들을 반영하고 있다. 이 공간의 핵심은 오픈 키친으로 사용되고 있는 마당이다. 전통주택의 마당은 대개 혼례나 제사. 잔치의 장소 등 다양한 행사를 소화하는 또 하나의 실이다. 그 외에도 일상적으로는 김장처럼 철따라 쓰이는 가변적 용도를 수용하고 있다. 이 푸드갤러리 에서도 이러한 가변적 행위가 반영된다. 내부는 중앙 홀을 중심으로 3개의 섹터로 나뉘는데, 먹의 흐름에 따라 담백한 테이블 배치를 보이는 입구의 접객공간과 클라이언트 취향이 온전히 반영된 서가 공간, 잔칫날 마당에 피던 차양을 연상시키는 접객공간 등으로 나뉜다.

Let’s talk about the detailed structure of this space centering around the court in the middle.

We know that there is no boundary between inside and outside. Rooms and court in Korean traditional houses. In this space, the court plays a role to tear down the boundary. Located in the middle of this space, the court seen from the rooms around it looks like Nanta theater where to beat everything with joy and excitement. On that account, we built open kitchen at this court and wanted to make dynamic movements in the kitchen harmonize with Korean traditional house’s own features. Although this space is defined as food gallery, it reflects various functions such as publication party, restaurant, and cooking class. The main space of this space is just the court used as the open kitchen. Usally, court in the traditional house is another room to hold diverse events such as wedding, religious services or memorial services, and feast. And it also has the changeable use by reason, for instance, to make kimchi. This food gallery has the changeable use too. The interior is divided into three sectors centering around the central hall : reception sector at the entrance with clean arrangement of tables along the flow of Meok, book sector to reflect on the taste of client completely, and customers’ sector to remind of the sunshade put over the court at the gala day.
